The harvesting of ice during the winter months was a major business prior to the advent of mechanical refrigeration. Ice houses were constructed near any body of water large enough to produce thick ice, to store this ice. In the ice house, the ice was then covered with an insulating material, such as sawdust, which prevented the ice from thawing. Anything beyond the anticipated local needs was then hauled to Potter Place for shipment to Boston.
